I LOVE getting fresh vegetables from the garden.  They taste so amazing, and are wonderful to use for recipes for those amazing end of summer dinner parties or just a simple meal at home with the kids.

Here are a few of my favorite recipes to make with some of these treasures:

PESTO:   (my own recipe)
2 cups basil from the garden1/2 cup olive oil
3 tsp. pine nuts or walnuts
1/4 cup parmesean cheese
1-2 cloves of garlic if desired

Blend in blender and put in serving bowl.  I like to stir in extra parmesean, pepper to taste, and whole pine nuts for an added finishing touch.

TOMATO-MANGO SALSA
4 plum tomatoes from the garden seeded and chopped into 1/4 inch dice
2 small or 2 large mangos, diced
1 med red onion, finely chopped
1 med red pepper from the garden, 1/4 inch dice
1 or 2 garlic cloves
1 tsp red pepper flakes
1/4 cup chopped fresh cilantro from the garden
1/4 pineapple juice
2 tbsp. distilled white vinegar
2 tbsp. fresh lime juice

Combine, cover, and refrigerate for at least 2 hrs before serving.  I like to give it a day to soak all the flavors together!!
